fish & potato chowder - instant pot
I saw a recipe on the internet that gave me the inspiration for this delicious chowder. I am always on the lookout for ways to put more fish into our diet and catfish is one of my favorite fish. I also want to use recipes that can be done in the Instant Pot. I put this together using things I had on hand. It turned out to be delicious so I am sure that this will become a regular item on our table.

Ingredients For fish & potato chowder - instant pot

2 cwater

1 lbcatfish filets, cut into chunks

1 cbaby potatoes, quartered

1 to 2ribs celery, thin sliced

1/2 ccorn kernels, fresh
-
3/4 cdiced onion
-
salt & pepper to taste

1/4 tspgarlic powder
-
2/3 cchicken broth
-
1 or 2 slicebacon, cooked and diced
-
1-1/2 cmilk
-
1/2 cinstant potatoes
-
1 Tbspbutter
-
1 or 2green onions, thin sliced, for garnish
How To Make fish & potato chowder - instant pot

1Put the water, fish, potatoes, celery, onions, corn, salt & pepper to taste, garlic powder, chicken broth, bacon, and milk into the Instant Pot.

2Close and seal the lid.

3Push the MANUAL button and set the time for 10 minutes of pressure.

4Let the Instant Pot release for 5 minutes, then turn it off, and do a quick release on the remaining pressure.

5When the pressure has released carefully remove the lid. Press the SAUTE button, then add the instant potatoes and butter to the Instant Pot.

6Cook and stir the chowder until it thickens, garnish with green onions, and serve.
