Ingredients For fish escabeche

2 lbfresh fish filets

salt and freshly ground pepper to taste

1/2 colive oil

1 tspsugar

2carrots, julienned
-
1/3 cwater
-
1/3 cvinegar
-
1leeks, julienned
-
2bay leaves
-
1 tsppeppercorns
-
1tomato, peeled and chopped
-
5garlic cloves
-
2 mdonion thinly sliced
-
1green bell pepper, julienned
-
1red bell pepper, julienned
-
flour seasoned with salt and pepper

lemon juice
How To Make fish escabeche

1Wash fish with lemon juice and rinse.

2Season filets with salt and pepper.

3Dredge into the flour and salt and deep fry in the hot oil.

4When frying the last fish, add olive oil to a pan.

5When hot add the vegetables and cook until the onions are soft.
-
6Pour in the vinegar, the water and the rest of the ingredients ( taste), bring to a boil and pour it boiling over the fish.

7Bring to a new boil and chill at least 24 hours.
