It looks fancy, but is very easy to make. I usually serve w/ rice pilaf.

Ingredients For fancy stuffed catfish

  • 6 Tbsp
    butter
  • 1/2 c
    finely chopped celery
  • 1/2 c
    finely chopped onion
  • 1/2 c
    shredded carrot
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    each salt & pepper
  • 1/2 c
    bread crumbs, i used italian-style, but you can used plain
  • 6 slice
    bacon, cooked and crumbled
  • 4
    catfish fillets
  • 2 Tbsp
    butter, melted
  • a sprinkling of parika for garnish

How To Make fancy stuffed catfish

    Heat oven to 350. Lightly spray a 9" x 13" baking pan w/ cooking spray. In lg skillet, over medium heat, melt 6 tbsp butter. Add celery, onion, garlic powder, carrot,, salt and pepper.

    Saute 5 mins. Remove pan from heat. Stir in bread crumbs and bacon crumbles. Evenly spoon mix down the middle of each fillet.

    Roll up jelly-roll style. Place seam-side down in pan. Brush w/ melted butter. Sprinkle w/ paprika.. Bake 30 mins, or until fish flakes easily.
