A slow-cooked, delicious shrimp dish. I usually serve it over orzo pasta. The simmered tomatoes and feta cheese give the shrimp depth in taste.

Ingredients For easy shrimp w/ simmered tomatoes and feta

1/4 cextra virgin olive oil

128 oz can crushed tomatoes

1/2 cdry white wine or chicken broth

1/2 tspdried oregano
-
1 pinchsalt
-
1 pinchcrushed red pepper

1-1/2 lbmedium shrimp, peeled, deveined

1 clow-fat feta cheese, crumbled
-
2 Tbspfreeze-dried chopped parsley

1/2 csliced onion, thinly sliced
How To Make easy shrimp w/ simmered tomatoes and feta

1In lg skillet, heat oil over medium heat. Add onion, cook until tender. Place onions in a 4-quart slow-cooker.

2Stir in tomatoes, wine, or broth, oregano, salt and crushed red pepper. Cover, cook on high for 2 hrs. Stir shrimp into sauce.

3Sprinkle shrimp w/ feta cheese. Cover, cook on high 10 mins or until shrimp are opaque. Sprinkle w/ parsley.
