Ingredients For easy shrimp fajitas

  • 1-1/2 Tbsp
    olive oil, divided
  • 1 lg
    green bell pepper, sliced thin
  • 1 lg
    red bell pepper, sliced thin
  • 1 lb
    medium shrimp, peeled, deveined
  • 1 c
    chopped onion
  • 1 pkg
    taco seasoning mix
  • 3 Tbsp
    water
  • 6
    flour tortillas, or 2 cups spanish rice, rice cooked

How To Make easy shrimp fajitas

  • 1
    Heat 1 tbsp oil in lg skillet over med-high heat. Add the peppers and onion. Cook until slightly crisp-tender. Remove veggies from skillet.

    Heat 1/2 tbsp oil in skillet. Add shrimp. Cook, stirring until shrimp are pink. Reduce heat to low. Return veggies to skillet.

    Stir in taco seasoning and water. Stir to coat evenly. Simmer until thickened and heated through. Serve w/ tortillas, or over rice.
