Ingredients For easy salmon cakes

1/4 cred pepper, finely chopped

1/4 cgreen onion, finely chopped

1large egg, beaten

2/3 ccrushed cracker crumbs

1/3 cpanko bread crumbs

1/2 tsppepper
-
1/2 tspold bay seasoning
-
1 can(14 ounces) salmon, drained and flaked
-
1/4 cmayonnaise
-
1 Tbsplemon juice
-
1 tspdijon mustard
How To Make easy salmon cakes

1In a small bowl, combine chopped red pepper, green onion, mayonnaise, lemon juice, Old Bay seasoning, mustard and pepper.

2Stir in egg, well drained salmon and the cracker crumbs. Mix thoroughly. Divide and form mixture into 6 to 8 balls. Roll balls in remaining Panko bread crumbs; flatten into cakes (about 1/2 inch thick)

3Fry cakes in 3 tablespoons of melted butter in skillet over medium heat for 3 to 4 minutes per side. Can be baked in the oven on a baking sheet at 375 degrees for 10 to 15 minutes on each side. or until golden brown.
