I made this one day when I had some extra shrimp and didn't know what to do w/ it. It came out so yummy. Great w/ some crusty french bread.

Ingredients For easy gumbo w/ shrimp

  • 1 stick
    butter
  • 1 c
    chopped onion
  • 1 c
    chopped celery
  • 1 lg
    green bell pepper, chopped
  • 1 tsp
    minced garlic in olive oil
  • 2 Tbsp
    all purpose flour
  • 1-1/2 tsp
    chili powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cayenne pepper
  • 2 can
    diced tomatoes w/ chilis, undrained
  • 1 c
    frozen okra, thawed
  • 1 c
    water
  • 1 lb
    lg shrimp, peeled, deveined

How To Make easy gumbo w/ shrimp

    In lg pot, melt butter over medium heat. Add onion, celery, green bell pepper and garlic. Cook until veggies are tender.

    Stir in flour, chili powder, salt and cayenne pepper. Cook, stirring for 1 min. Add tomatoes, okra and water. Simmer for 10 mins.

    Add shrimp and cook until shrimp turn pink. Heat through.
