easy breezy fish & veggie packets

This is a fantastic dinner for weeknights because you can just put it in the oven and forget about it. I keep fresh parsley growing in my windowsill so it's always within easy reach. I've learned that there's so much more to parsley than simply decorating a plate, it helps ease bloating and pms and has an extremely high vitamin c content!

Ingredients For easy breezy fish & veggie packets

  • 1 lb
    fish filets, your choice
  • 3 tsp
    mrs dash or other salt free seasoning blend
  • 4
    lemon slices
  • 1 c
    sliced veggies, i like zucchini
  • 4 Tbsp
    chopped fresh parsley
  • cooking spray

How To Make easy breezy fish & veggie packets

    Preheat oven to 350 degrees. Tear off 4 sheets aluminum foil large enough to make a packet around a fish fillet with the veg. Spray foil with cooking spray.

    Sprinkle seasoning on both sides of each fillet and place on foil. Top each fillet with a lemon slice, a quarter cup of the veg and 1 tsp parsley.

    Fold foil around each fish fillet and fold edges to seal. Place packets on a baking sheet and bake 18 minutes or until fish flakes easily with a fork.
