easy breezy fish & veggie packets
This is a fantastic dinner for weeknights because you can just put it in the oven and forget about it. I keep fresh parsley growing in my windowsill so it's always within easy reach. I've learned that there's so much more to parsley than simply decorating a plate, it helps ease bloating and pms and has an extremely high vitamin c content!

Ingredients For easy breezy fish & veggie packets

1 lbfish filets, your choice

3 tspmrs dash or other salt free seasoning blend

4lemon slices
-
1 csliced veggies, i like zucchini

4 Tbspchopped fresh parsley

cooking spray
How To Make easy breezy fish & veggie packets

1Preheat oven to 350 degrees. Tear off 4 sheets aluminum foil large enough to make a packet around a fish fillet with the veg. Spray foil with cooking spray.

2Sprinkle seasoning on both sides of each fillet and place on foil. Top each fillet with a lemon slice, a quarter cup of the veg and 1 tsp parsley.

3Fold foil around each fish fillet and fold edges to seal. Place packets on a baking sheet and bake 18 minutes or until fish flakes easily with a fork.
