dirty sweet tilapia

This is my take on the mystery ingredients for the Ninja challenge this week, using Cola, Black Beans and Tilapia! I've never tried to make "dirty rice" before, and I was so excited to do so; it came out great! Soaking and cooking the beans in the cola resulted in a taste like maple beans.. it was really good.

Ingredients For dirty sweet tilapia

4 ozblack beans

1 canpepsi
-
1/2small yellow onion

2 Tbspbrown sugar

1 crice

2 1/2 tspsalt, divided

1/2 tsppepper
-
3 Tbsplemon juice, divided

3 Tbspchopped chives
-
1tilapia fillet

1 Tbspolive oil
How To Make dirty sweet tilapia

1Wash beans. Soak black beans in enough Pepsi to cover the tops of the beans. Cover and let soak for 2 hours. Check halfway; beans will have soaked up the cola so add more to keep them covered in liquid.

2Transfer beans along with pepsi they are soaking in, into a pot. Add water to cover beans. Bring to a boil. Then lower heat, add the onion and brown sugar, cover and simmer until beans are tender (about 2 hours). You will need to occasionally add water to keep beans covered.

3In the last 20-25 minutes of beans cooking, prepare rice.

4In the last 10 minutes of beans cooking, add 1 tsp salt.

5Add beans to rice. Using a potato masher, mash partially, leaving most of the mixture un-mashed. Add 1 tsp salt. Mix together.

6Cut tilapia into smaller pieces. Season with 1/2 tsp. salt, pepper and 2 Tbs. lemon juice. Lightly sautee in pan with olive oil until lightly browned.

7Serve tilapia over rice and top it with chives. Squeeze more lemon juice over the whole dish.
