Ingredients For curried prawns (sallye)

2 lbprawns***

1/2 colive oil
-
2 Tbsphomemade curry powder (link below)

1 mdonion, finely minced

1 cgrated coconut
-
1/2 ccoconut milk, unsweetened

1/2red bell pepper, minced

1/2green bell pepper, minced
How To Make curried prawns (sallye)

1Peel and quarter onion Devein and deseed peppers and cut into chunks Place in food processor and pulse until finely minced

2Peel and de-vein prawns and set aside (or you can buy already peeled and deveined)

3In cast iron or heavy skillet, heat oil to medium high When oil begins to shimmer, add onions/pepper mixture and curry powder. Saute until onions are translucent (about 3 minutes) Stir frequently to avoid burning

4Add prawns to skillet and continue cooking until prawns turn pink (3-5 minutes) Add coconut and coconut milk and cover skillet. Turn heat down to low and simmer until sauce begins to thicken (about 5 minutes) Stir to prevent burning

5***You can substitute shrimp, scallops or tilapia cut into bite sized pieces for the prawns
