Found this recipe in my Better Homes and Gardens cookbook. For years I haven't been able to serve fish to my family as my husband refused to eat it. I love good fish; and, I'm happy to say that it is a regular on my table once again.

Ingredients For crispy oven-fried fish

  • 1 lb
    skinless fish fillets ( should be 1/2"-3/4" thick)
  • 1/4 c
    milk
  • 1/3 c
    all purpose flour
  • 1/3 c
    fine dry bread crumbs
  • 1/4 c
    grated parmesan cheese
  • 1/2 tsp
    dried dill
  • 1/8 tsp
    black pepper
  • 2 Tbsp
    butter, melted

How To Make crispy oven-fried fish

    Thaw fish if frozen. Rinse and pat fillets dry w/paper towels. Cut into 4 serving sized pieces. Measure thickness of fish.

    Place milk in shallow dish. Place flour in a second shallow dish. In a third shallow dish combine bread crumbs, cheese, dill, and pepper. Mix. To this, add the melted butter and stir till combined. Dip fish in the milk; coat with the flour. Dip again in the milk; then in the crumb mixture to coat all sides. Place fish on a greased baking sheet. Bake, uncovered, in a 450 degree oven for 4-6 minutes per 1/2" thickness or until fish begings to flake when tested with a fork.
