I am allergic to many seafoods, even to touch it, but I don myself with gloves & make this dish for my husband, because he likes it. He really loves this version, that is also listed in my cookbook. You can use either corn flake crumbs or panko bread crumbs, I always have panko bread crumbs in the pantry, but used the Corn Flake crumbs before I started using Panko. You can almost always change what you don't like in most recipes for something that you do like or do have on hand without making a trip to the store. When I make this for him, I usually have something else, & just have the sides.

Ingredients For crispy oven fried fish

  • 2 lb
    ocean perch fillets, mahi mahi, or your choice
  • 2 lg
    egg whites, room temperature
  • 1 Tbsp
    lemon juice
  • 1 tsp
    dill
  • 1/2 tsp
    salt
  • 1 tsp
    black pepper
  • 1 c
    corn flake crumbs or panko bread crumbs or more if needed
  • non stick cooking spray
  • 2 tsp
    paprika ( if using panko bread crumbs)

How To Make crispy oven fried fish

    PREHEAT OVEN TO 400 DEGREES F. Coat a baking sheet with non stick cooking spray & set aside till needed.

    Combine egg whites,lemon juice, dill, salt & black pepper in a shallow dish. Add corn Flake crumbs or panko to the second shallow dish. Dip fish into egg mixture and then into crumbs, coating all sides.

    Place on prepared baking sheet. Then spray lightly with cooking spray. Bake for 12 to 15 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
