Ingredients For crab pudding

  • 8 c
    sour dough bread diced
  • 1 sm
    diced onions
  • 2
    stacks small diced celery
  • 1
    bulb small diced fennel
  • 2 md
    small diced carrots
  • 2 clove
    crushed garlic
  • 2 Tbsp
    butter
  • 1 lb
    crab meat
  • 2 Tbsp
    chopped thyme
  • 2 Tbsp
    chopped parsley
  • 6
    beatens eggs
  • 4 c
    1/2 and 1/2 cream
  • 1/2 tsp
    dry mustard
  • salt and pepper to taste

How To Make crab pudding

  • 1
    In a heavy skillet, heat the butter on medium heat until it stops foaming. Add the chopped vegetables and sauté until the onions begin to soften and become fragrant. (about 5 min) Add the garlic and thyme leaves and cook 1 more minute. Place veggie mixture in a large mixing bowl. Add remaining ingredients and mix well. Place in an ovenproof casserole dish and bake in a preheated 400-degree oven until browned and firm. ( about 25 min) Let rest about 10 min before serving.
