Ingredients For crab cakes with spicy mayonnaise

1 lblump crabmeat

1/2 ccelery, finely chopped

1/2 cgreen onions, chopped

3 cpanko bread crumbs (divided with 2 cups reserved for coating)

2 mdeggs
-
1/3 clight mayonnaise
-
1/2 tspdijon mustard
-
2 Tbspseafood seasonings (such as old bay)

1dash hot pepper sauce
-
1 Tbsplemon juice
-
3 Tbspfinely chopped parsley

4 Tbspbutter
- SAUCE:
-
1 clight mayonnaise
-
2 tspsun-dried tomato paste
-
1minced garlic clove
-
salt & pepper
-
dash of hot pepper sauce
How To Make crab cakes with spicy mayonnaise

1Combine all the ingredients together in large mixing bowl (reserving 2 cups panko crumbs for coating).

2Form mixture into 3 inch patties. In small dish or bowl, place reserved panko crumbs and press each patty into the crumbs to coat outsides of patties.

3Fry in butter (about 2 tbsp.) in large skillet on low until the patties are golden brown and crispy, about 5 to 8 minutes on each side. Place on dish and keep warm.

4SAUCE: Combine all the sauce ingredients in small mixing bowl. Serve over warm crab cakes. 11 points per serving
