My daughter who lives in Maine gave me this recipe last year. She had prepared it for a surprise birthday brunch for her fiance. He was impressed! He loved it-so great success was had by Terri and was enjoyed by all. This is a delicious casserole. If you love crab don't pass this one by!

Ingredients For crab brunch casserole

2eggs, beaten

2 cmilk
-
2 cseasoned croutons

8 ozshredded cheddar cheese

1 Tbspdried minced onion

1 Tbspdried parsley
-
1 lbfresh crabmeat
-
salt and pepper to taste

1/4 cgrated parmesan cheese
How To Make crab brunch casserole

1Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.

2In large bowl, mix the eggs, milk, croutons, cheese, onion, and parsley. Stir in the crabmeat. Season with salt and pepper. Spoon into the prepared baking dish, and sprinkle with Parmesan cheese.

3Bake 1 hour in the preheated oven, or until a knife inserted into center of the casserole comes out clean. Serve immediately.
