Ingredients For cornflake crusted fish

2 ccornflake
-
1/3 cunbleached all-purpose flour

1/2 tspOld Bay seasoning

1/2 tspgarlic powder

1/2 tsponion powder
-
1/2 tspground Himalayan pink salt, or to taste

1/2 tspfreshly ground black pepper, to taste (I always use mixed peppercorns)

2 lgfree-range eggs, beaten
-
1 lbfish fillets (tilapia, rockfish, halibut, cod, etc.), patted dry (4, 4-oz. each)
How To Make cornflake crusted fish

1Preheat oven to 400ºF and line a large baking sheet with parchment paper; set aside.

2Place cornflakes in a large re-sealable plastic bag, close it and use a rolling pin to crush; set aside.

3In a shallow dish, place flour, Old Bay seasoning, garlic powder, onion powder, salt and pepper; mix well.

4In the second shallow dish, add the eggs. In the third shallow dish, place the crushed cornflakes.

5Working with one fillet at a time, dredge it in the flour mixture and shake off any excess. Dip into the eggs, letting the excess drip off and then transfer to the cornflakes, coating the fish by pressing down to adhere.

6Place the coated fillets on the prepared baking sheet and lightly spray with cooking spray.

7Transfer to the preheated oven and, depending on the thickness of the fillets, bake for 18 to 20 minutes or until the internal temperature reaches 145ºF.
