This is a delicious recipe and so good for you. I believe the original recipe came from a Taste of a Home magazine. The recipe has been tweaked for my family's taste. The pictures for this dish show two fillets instead of the four listed in the recipe since I was only cooking for two that night. It really is worth a try, it's so good. Enjoy!

4salmon fillets (6 oz.

1/2 tspsalt (divided)

1/2 colive oil, extra virgin

2 Tbspbalsamic vinegar
-
2 Tbsphoney
-
1 tspdijon mustard
-
1ugly tomato, medium size
-
1/4 cscallion, chopped
-
1/4 csmall yellow & orange peppers (1 of weach)

2 Tbspgreen olives, chopped
How To Make oh so yummy mediterranean salmon-connie's

1Gather ingredients.

2Place salmon in a greased baking dish.

3Sprinkle with a 1/4 teaspoon salt.

4Whisk olive oil, balsamic vinegar, honey, mustard, and remaining salt in a small bowl.

5Spoon 1 tablespoon whisked mixture over each salmon fillet.

6Chop tomatoes, scallions, peppers and olives.

7In a large bowl, combine tomatoes, scallions, peppers, olives and remaining oil mixture.

8Soon tomato mixture over salmon fillets.

9Bake at 425 degrees for 12-15 minutes or until salmon flakes easily with a fork.
