We catch a lot of striper, and end up freezing it. To add some variety to our fish dishes, I tried out a version of a classic...tempura. Serve with sweet and sour sauce with a dash of red pepper flakes.

Ingredients For coconut striper

  • 1-2 lb
    striper (rockfish or striped bass)
  • 1 box
    tempura batter mix
  • 1 1/2 c
    shredded coconut

How To Make coconut striper

  • 1
    Trim striper (or whitefish) and cut into "nuggets"
  • 2
    Follow tempura batter mix instructions on box, add in coconut and mix well.
  • 3
    Dip fish nuggets in batter mix, and drip into deep fryer. Remove when nuggets are golden brown. Excellent with rice and dipping sauce!
