Two Words...OH YEAH! This is one of my favorites! You will be thanking me for this one! :)Also you may add more coconut if you like. ***Make sauce first about 2 hours in advance! Sauce needs to chill to blend flavors

Ingredients For coconut shrimp with pinacolada dipping sauce

  • 2 c
    bisquick mix
  • 1 c
    beer
  • 3 Tbsp
    pineapple,crushed
  • 1 c
    coconut flakes
  • 1/2 can
    pinacolada concintrate
  • 1/3 c
    sour cream
  • 1
    bag of uncooked large or jumbo shrimp

How To Make coconut shrimp with pinacolada dipping sauce

    For Shrimp: In Medium Bowl combine 1 cup Bisquick mix with beer. Set aside.In another bowl add just 1 cup Bisquick mix and coconut. In fryer heat up oil. Dip shrimp shells removed into beer mixture then into Bisquick powder. Let sit a minute then fry 2-3 minutes. Drain on paper towel.

    Sauce: Mix together 1/2 can pina colada concentrate and sour cream. Add pineapple. mix well Chill 1 hour. Serve cold. Sauce is for dipping!
