Ingredients For coconut fried shrimp

1/2 lbunpeeled medium size fresh shrimp

3/4 cpancake mix

3/4 cbeer
-
vegetable oil

1/4 call purpose flour

1 cflaked coconut
How To Make coconut fried shrimp

1Peel shrimp, leaving tails intact; devein, if desired.

2Combine pancake mix and beer in a small bowl; stir until smooth.

3Pour oil to depth of 2 inches into a dutch oven; heat to 350 degrees.

4Dredge shrimp in flour, shake off excess.

5Dip shrimp into batter, dredge in coconut.

6Fry, a few at a time, 45 seconds on each side or until golden.

7Drain on paper towels.
