2salmon, skinless fillet

2 TbspCajun seasoning

2 tspdry thyme

2 tspcoarse salt

1 tspblack pepper
- VEGETABLES

2 crainbow carrots
-
2 cred potatoes, small

2 Tbspolive oil

2 tspsalt and pepper

2 tspdry sweet basil
- DIILL SAUCE

1/3 csour cream
-
2 tsplemon juice
-
2 sprigdill

1 Tbspolive oil
How To Make cajun sauteed salmon with rainbow carrots and potato

1Season salmon fillets with Cajun seasoning, salt, and pepper. Sprinkle dry thyme.

2Spray a saute pan with non-stick spray. Saute salmon in a pan skin side down first for 5-7 mins. Then flip and saute for another 5-7 mins.

3Place in a 400'F oven for 10 mins.

4In two separate saucepans, place chopped carrots in one with a bit of water.

5Place potatoes in the other. Boil both for 8 mins.

6Strain and add seasonings, basil, salt, pepper, and olive oil.

7Add carrots and potatoes to a baking sheet. Roast in 400'F oven for 15 mins.

8Dill Sauce: In a bowl, combine sour cream, dill, lemon juice, and olive oil. Mix well. Add to salmon when finished.
