2 lgcleaned fresh head on rainbow trout

2 lg2 garlic cloves minced

1/4 ckalmati olives

2 Tbspcapers

8fresh sage leaves

1 mdfresh lemon juice

2roma tomatoes, deseeded and chopped

tspred pepper flakes (optional)

1/2butter, stick

3 Tbspextra virgin olive oil

salt and pepper to taste
How To Make brown butter rainbow trout

1brown the butter in a skillet, add olive oil. add minced garlic be careful not to burn. pan fry fish for about 5-6 mins on each side til skin is nice and crispy. add sage leaves and pepper flakes half way thru the cooking. add the remaining ingredients, baste with the butter and oil mixture. fish is done when the flesh is nice and flaky...
