Ingredients For bob's coconut fish.

  • 2 lb
    fish fillets
  • 2 tsp
    brown sugar
  • 1 1/2 tsp
    salt
  • 3/4 tsp
    dry mustard
  • 1/2 tsp
    white pepper
  • 1/4 tsp
    granulated garlic
  • 1/4 tsp
    granulated onion
  • a few dashes of hot sauce
  • 4
    egges
  • 1/4 c
    butter milk
  • 1 c
    bread crumbs, seasoned
  • 2/3 c
    coconut, unsweetened
  • 3/4 -1 cup c
    coconut oil
  • 3/4 c
    flour

How To Make bob's coconut fish.

    I used a 10 inch cast iron skillet to fry the fish. You will need 3 shallow dishes for the breading mix. In one dish place suger, salt, seasoning, and flour. In the next dish add eggs, hot sauce, and butter milk. Mix well. In the last dish mix bread crumbs and coconut together..

    Add 1/4 inch of coconut oil to skillet and heat oil to med-high heat. Dip fish fillets one at a time into flour mix, then into egg mix, and then into breading mix. Press fish into breading mix on both sides.

    Fry fish a few at a time for about 3 minutes per side. Or until golden brown. Add more oil as needed. You may also bake the fish in the oven set at 400 for 12-15 minutes.. Serve with a lemon slice and your favorite dipping sauce.
