Loving fish the way we do...I wanted something besides just fried or baked...I love blackened meats, so this was perfect...you can adjust your seasonings to your personal taste, but the chili powder base makes it so easy. I have also used this with grouper, my husband loves it...Serve with Pan grilled new potatoes and seasoned steamed asparagus...

1/2 tsponion powder

How To Make blackened salmon filets
-
1Wash the salmon filets, add the lemon juice and chill until ready to cook. Add olive oil to pan and heat.
-
2Mix all the seasonings together well. I use an older salt shaker for my mixture to store in, as I keep a good amount of this blackening mixture made up at a time. Drain excess juice from salmon filets. You can add the seasonings to both or just one side of each filet. Generously sprinkle blackening mixture onto one side of the salmon filets, place into hot skillet, if you want the other side blackened, you can sprinkle it now, while in the pan. I used a medium heat and then turn down if necessary. Cook for about 2-3 minutes, then turn and cook for about 2-3 minutes, I then cover the pan, turn down the heat and finish off for about 3-4 minutes, or you can do that in the oven...
