One of the favorite dishes of Louisiana! Blackened catfish or red fish appears on menus all over the state. I've posted the recipe for the Blackened Seasoning Mix. Be sure to look it up to use for this recipe.

Ingredients For blackened catfish

2 lbcatfish fillets

1 stickbutter
- OR

1/4 coil

blackened seasoning mix (see recipe elsewhere)
How To Make blackened catfish

1Heat a large heavy skillet; melt butter OR use oil.

2Dredge filets in Blackend Seasoning Mix and coat well.

3Lay the fiuets in heated skillet and brown on both sides. Serve hot.
