This is a great beer batter recipe. I love fish & chips. Serve with a little cocktail and/or tarter sauce and malt vinegar for dipping and enjoy! I use this mostly for fish. My favorites in particular are cod, flounder and ocean perch but you can use this batter for anything such as mushrooms, pickles, cheese sticks, chicken, etc.

Ingredients For best all-purpose batter

3/4 call purpose flour

2 Tbspcorn starch

1/4 tspbaking soda
-
1/4 tspbaking powder

1/4 tspsalt
-
1 tspPaul Prudhomme's seafood magic

3/4 (+) csparkling water (may need more to get consistency just right)

hot oil, for frying
How To Make best all-purpose batter

1Mix together the flour, cornstarch, baking soda, baking powder, salt and seafood magic together with a wire whisk until well combined.

2Begin adding soda until a smooth and medium thick batter is created. (You may need a little more soda to get the perfect consistency.)

3Dip whatever you're frying (onion rings, chicken, fish, etc.) into mixture; fry in deep hot oil for 1-2 minutes on each side or until golden brown and cooked through.
