4bass fillets about 4 oz each

cornstarch

4 Tbspvegetable or peanut oil

4 clovegarlic minced

1 lgred chili seeded and chopped

1 Tbspbrown sugar

juice of 2 limes

grated zest of 1 lime

cilantro for garnish
How To Make bass fillet with chili lime sauce

1Salt and pepper the fish fillets and dredge them in cornstarch shaking off excess. Cook them in oil until browned and cooked through. Carefully remove them from the pan. Set aside and keep warm

2Add garlic and chilies to pan. Stir fry 2 minutes. Add the brown sugar lime juice and zest and 2 tbsp water. Bring to a boil. Reduce the heat and simmer 2 minutes.

3Serve sauce over fish garnished with cilantro.
