Ingredients For barbecued fish margarita

1/2 lbfish filets, your choice

sugar, to taste

2 Tbspcilantro, chopped

1 Tbspjalapenos, minced

1onion, finely chopped

3tomatoes, diced
-
1 Tbspvegetable oil
-
1/2garlic cloves, crushed
-
1 tspsalt
-
3/4 clime juice
-
1/2 ctriple sec
-
1/3 ctequila
-
pepper to taste
How To Make barbecued fish margarita

1Place fish in a non-aluminum dish large enough to hold it in a single layer.

2Combine tequila, triple sec, lime juice, salt, garlic and 2 teaspoons of the oil and pour over the fish, rubbing all over.

3Cover and marinate for 1/2 hour at room temperature or up to 3 hours in the refrigerator, turning occasionall

4Just before serving, combine tomatoes, onions, chilies, cilantro, sugar and salt to taste.

5Heat the grill to VERY hot.

6Remove fish from marinade, pat dry (reserving marinade) and brush lightly with 1 teaspoon of the oil and grind pepper over the surface.

7Cook on a greased grill for about 4 minutes per side, or until flesh is opaque.

8Meanwhile, boil marinade in a saucepan for 2 minutes, remove and discard garlic cloves, and spoon a little over the fish.

9Spoon some tomato salsa along side and serve.
