This trout dish is excellent served with a fresh-baked traditional Irish Soda Bread.

4green onions, sliced

1 mdgreen pepper, chopped

1/4 cbutter or margarine

1 cplain breadcrumbs

1/4 cfresh parsley, chopped

1 tsplemon juice

1 tspsalt
-
1/4 tspdried basil leaves

4drawn, whole trout about 8-oz each (i've occasionally used fillets when that's all i can find)

salt, for rubbing

12cherry tomatoes

sprigfresh parsley, for garnish (optional)
How To Make baked trout, irish style

1Preheat oven to 350°F. Grease a 13x9-inch baking dish; set aside.

2Cook and stir onions and pepper in butter until onions are tender. Remove from heat. Stir in breadcrumbs, parsley, lemon juice, salt, and basil.

3Rub cavities of each with salt. Stuff each fish with about 1/4 cup of the stuffing.

4Place fish in prepared 13x9-inch baking dish. Bake in oven at 350° for 30 to 35 minutes, or until fish flakes easily with fork.

5Garnish with cherry tomatoes and sprigs of fresh parsley, if desired, and serve.
