This recipe comes from a friend in New Orleans. I'm a huge mushroom fan, so I really enjoy this recipe.

Ingredients For baked trout

1/2 lbfresh mushrooms, sliced

2 Tbspbutter, melted

1 csoft wheat-berry breadcrumbs (i use pepperidge farms bread)

1/8 tspsalt

1/8 tsppepper

4trout fillets (4 ounce)

1/4 cplus 2 tablespoons butter, melted and divided
How To Make baked trout

1Place the mushrooms in an ungreased 11 x 7 x 1 1/2 inch baking dish. Drizzle with 2 tablespoons melted butter. Set aside.

2Combine the breadcrumbs, salt, and pepper in a shallow dish; stir well.

3Dip the fillets in 3 tablespoons melted butter and dredge in the breadcrumb mixture.

4Place the fillets on top of the mushrooms. Drizzle with the remaining 3 tablespoons melted butter. Bake, uncovered, at 375 degrees for 20 minutes or until the fish flakes easily when tested with a fork.
