This is a Norwegian dish that nice pairs halibut with a crisp white wine and jarlsberg cheese to create a wonderful main dish that's elegant enough for a dinner party.

4halibut fillets (about 6 ounces each)

cooking spray

1 Tbsplemon juice

2 tspchopped fresh dill

1 ccoarsely chopped tomato

1/2 csliced green onion (scallions)

1/2 ccoarsely chopped red bell pepper

1/2 ccoarsely chopped green bell pepper

1/2 ccoarsely chopped yellow bell pepper

1/2 tspsalt
-
1/4 tspblack pepper
-
1/2 cshredded jarlsberg cheese (2 ounces)

1/2 cdry white wine
How To Make baked halibut with vegetables

1Preheat oven to 425ºF. Coat 13x9-inch baking dish with nonstick cooking spray.

2Place fish in the baking dish, and drizzle lemon juice over the fish. Sprinkle the dill on top.

3Gently toss together the tomato, bell peppers, salt and pepper. Spread the tomato mixture over the fish. Sprinkle the cheese on top.

4Pour the wine into baking dish; cover with foil, and bake at 425º for 25 minutes or until fish flakes easily when tested with a fork.
