baked fish with spinach and asian drizzle

Before the days of collecting recipes on line, back in the 80s i clipped many, many recipes and kept them in a binder. I came across this one today that i had clipped from a magazine that featured healthy recipes. This is great served withcouscous on the side and a fresh tomato and cucumber salad.

Ingredients For baked fish with spinach and asian drizzle

1 lbprewashed spinach

4 tspvegetable oil ;divided

1 tspgarlic powder

1 1/2 lbfish fillets

salt to taste

2 Tbspsay sauce
-
2 Tbsprice wine vinegar
-
1 tsptoasted sesame oil
-
1/2 tsphot red pepper flakes
-
2 tspsugar
How To Make baked fish with spinach and asian drizzle

1spray large 12x18 in baking sheet with vegetabel oil cooking spray.

2On baking sheet toss spinach with 2 teaspoons of the oil and 1/2 teaspoon garlic powder.

3Arrange fish over spinach, spread with remaining 2 teaspoons oil and spinkle lightly with salt and remaining garlic power.

4Place on bottom rack of oven and turn oven to 400 degrees. Bake untilfish is opaque and spinach is wilted (15-17 min). Meanwhile prepare soy-sesame drizzle.

5Drizzle sauce over fish and spinach and serve.

6NOTE: instead of soy-sesame drizzle, you can also drizzle with lime-ginger drizzle by combining 2 tablespoons fresh lime juice, 2 tablespoon asian fish sauce, 1/2 teaspoon ground ginger and 1/2 teaspoon hot red pepper flakes in a small bowl.
