Ingredients For baked fish w/ crispy crumbs

4 Tbspbutter, unsalted

1 lgshallot, minced

salt & pepper

1 clovegarlic, minced

1/2 tspthyme, dried

3/4 cpanko bread crumbs

1 Tbspparsley flakes
-
2 Tbspmayonnaise, fat-free

1 x lgegg yolk
-
1/2 tsplemon zest, grated

4skinless cod fillets, or whatever fish you like
How To Make baked fish w/ crispy crumbs

1Preheat oven to 300 degrees F. with oven rack in middle postion. Set a wire rack inside a baking sheet sprayed with cooking spray. Melt butter in skillet over medium heat. Add shallot & 1/2 tsp salt & cook until softened, about 3 minutes. Add garlic & thyme & cook until fragrant, about 30 seconds. Add panko & 1/4 tsp pepper & cook, stirring constantly, until evenly browned, 5 - 7 minutes. Remove from heat & stir in parsley. Transfer panko mixture to a shallow dish & let cool for 10 minutes.

2In a medium bowl, whisk mayonnaise, yolk, lemon & 1/4 tsp pepper together. Pat fish dry with papper towel & season with salt & pepper. Coat tops of fillets evenly with mayo mixture. Working one fillet at a time, dredge coated side in panko mixture, pressing gently to adheare & place fish crumb side up on prepared wire rack. Bake until centers are just opaque, about, 30 - 40 minutes, rotating pan 1/2way through bakings time.
