Ingredients For baked fish in wine sauce & couscous

  • FISH:
  • 2 lg
    tomatoes, seeded & chopped
  • 1/3 c
    white wine, dry
  • 3 Tbsp
    mint, fresh, chopped
  • 4
    tilapia, flounder or sole fillets (about 1 - 1 1/4 lbs)
  • 1/4 tsp
    salt
  • 1/8 tsp
    black pepper
  • 4 thin
    lemon slices
  • 2 Tbsp
    butter, unsalted
  • COUSCOUS:
  • 1 1/2 c
    couscous, plain
  • 1 1/2 c
    water
  • 2 Tbsp
    butter, unsalted
  • 1/4 tsp
    salt
  • 1/8 tsp
    black pepper

How To Make baked fish in wine sauce & couscous

    Preheat oven to 450 degrees F. Coat baking pan just large enough to hold the fish in a single layer with nonstick cooking spray.

    FISH: In medium sized bowl, gently stir together tomatoes, wine & mint.
  • 3
    Season fish with salt & pepper. Place in prepared baking dish. Pour tomato mixture over fish. Place a lemon slice on each fillet.

    Bake for 17 - 18 minutes or until fish is cooked through & flakes easily when tested with fork. Remove fish to warm serving dish. Whisk butter into pan juices.

    COUSCOUS: While fish is cooking, prepare couscous following package directions, using the weater, butter, salt & pepper.

    To serve, divide couscous amoung 4 plates; top with fish. Spoon sauce from baking pan over couscous & fish.
