- FISH:

2 lgtomatoes, seeded & chopped

1/3 cwhite wine, dry

3 Tbspmint, fresh, chopped

4tilapia, flounder or sole fillets (about 1 - 1 1/4 lbs)

1/4 tspsalt

1/8 tspblack pepper

4 thinlemon slices
-
2 Tbspbutter, unsalted
- COUSCOUS:
-
1 1/2 ccouscous, plain
-
1 1/2 cwater
-
2 Tbspbutter, unsalted

1/4 tspsalt

1/8 tspblack pepper
How To Make baked fish in wine sauce & couscous

1Preheat oven to 450 degrees F. Coat baking pan just large enough to hold the fish in a single layer with nonstick cooking spray.

2FISH: In medium sized bowl, gently stir together tomatoes, wine & mint.

3Season fish with salt & pepper. Place in prepared baking dish. Pour tomato mixture over fish. Place a lemon slice on each fillet.

4Bake for 17 - 18 minutes or until fish is cooked through & flakes easily when tested with fork. Remove fish to warm serving dish. Whisk butter into pan juices.

5COUSCOUS: While fish is cooking, prepare couscous following package directions, using the weater, butter, salt & pepper.

6To serve, divide couscous amoung 4 plates; top with fish. Spoon sauce from baking pan over couscous & fish.
