My husband and I are trying to eat healthier and fresh foods are at the top of our list. I have never been much of a seafood fan, but this is so good I want to make it again soon! I just tweaked this recipe last night and this portion is perfect for just two people. Multiply this by the number of people and I am sure it will be a hit! I served it with mashed sour cream and green onion potatoes, and a side of asparagus and tomatoes

What a quick and easy dinner for two. The almond crust fries perfectly and has a slightly nutty flavor. We love the savoriness of the Parmesan cheese. It's delicious on the tender, delicate tilapia.

    tilapia fillets
  • 1
    egg
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    lemon pepper
  • 1/4 tsp
    parsley flakes
  • 1 Tbsp
    flour
  • 1/4 c
    grated Parmesan cheese
  • 1/4 c
    almonds, finely chopped
  • 1-1/2 Tbsp
    butter
  • 2
    lemon wedges

How To Make almond crusted tilapia for two

  • Eggs and spices in a dish.

    In a shallow dish beat egg and add spices, then set aside.
  • Chopped almonds and Parmesan cheese in a dish.

    In a second shallow dish, mix finely chopped almonds with Parmesan cheese and set aside.
  • Dusting the tilapia with flour.

    Lightly dust each fillet with flour on both sides.
  • Butter melted in a skillet.

    Melt butter in a non-stick skillet over medium-high heat.
  • Fillets dipped in the egg mixture.

    Dip floured fillets into egg mixture.
  • Dipping fillets into almond/Parmesan cheese mixture.

    Then dip into almonds and cheese mixture. Press down to collect as much coating as possible on both sides of each piece.
  • Frying the tilapia.

    When skillet is hot, saute the fillets turning only once till golden brown (approximately 2-1/2 minutes per side).
