My husband and I are trying to eat healthier and fresh foods are at the top of our list. I have never been much of a seafood fan, but this is so good I want to make it again soon! I just tweaked this recipe last night and this portion is perfect for just two people. Multiply this by the number of people and I am sure it will be a hit! I served it with mashed sour cream and green onion potatoes, and a side of asparagus and tomatoes

Ingredients For almond crusted tilapia for two

2tilapia fillets

1egg

1/4 tspgarlic powder

1/4 tsplemon pepper

1/4 tspparsley flakes

1 Tbspflour

1/4 cgrated Parmesan cheese

1/4 calmonds, finely chopped

1-1/2 Tbspbutter

2lemon wedges
How To Make almond crusted tilapia for two

1In a shallow dish beat egg and add spices, then set aside.

2In a second shallow dish, mix finely chopped almonds with Parmesan cheese and set aside.

3Lightly dust each fillet with flour on both sides.

4Melt butter in a non-stick skillet over medium-high heat.

5Dip floured fillets into egg mixture.

6Then dip into almonds and cheese mixture. Press down to collect as much coating as possible on both sides of each piece.

7When skillet is hot, saute the fillets turning only once till golden brown (approximately 2-1/2 minutes per side).

8Serve with lemon wedge garnish.
