almond baked cod

I adopted this recipe when I was looking for a different way to make some cod filets. I had all the ingredients and it looked good. Trying to keep it a little healthier, the butter was reduced to 1/4 cup from the original 1/2 cup. I also changed the seasoning a little. It was baked at 400 degrees so it would brown. That also helped toast the almonds on the fish the last 10 minutes. This was instead of seperatly as the original directions said. Saved a step there. I served it with panko parmesan crusted zuccini wedges and quinoa. Enjoy!

Ingredients For almond baked cod

  • 2 lb
    cod (any white fish will work)
  • 1/2 c
    flour
  • 1/2 tsp
    each of lemon pepper and season salt
  • 1/4 c
    almonds, sliced or slivered
  • 1/4 c
    butter, melted
  • 1/4 c
    lemon juice
  • 2 tsp
    lemon peel, grated
  • 1/4 c
    green onion, chopped

How To Make almond baked cod

    Cut fish into serving size pieces.

    Spray 9"x13" ovenproof pan with non-stick spray.

    Coat fish with flour and salt mixture; place in single layer in pan.

    Mix butter, lemon juice and peel together and pour over fish; bake 15 minutes in 400 degree oven.

    Sprinkle with slivered roasted almonds and bake another 10-15 minutes or until fish tests done. Sprinkle with diced green onions and serve. Enjoy!

    I served mine with quinoa and baked Panko parmesan zucchini wedges. yummm
