I was looking through recipes for dinner that included chicken, nothing caught my eye. I thought of mexican but didn't have ingredients that most recipes called for. After looking through numerous recipes, I gave up and decided to wing it! I dug in the pantry and this is what I came up with. It came out very tasty and both me and my husband loved it! This will definately be a commonly used recipe in our house!

Ingredients For yummy tummy spicey chicken mexican casserole

1 3/4 cbisquick
-
3/4-1 ccooking liquid from chicken

1 cancorn, sweet yellow

1/8 cfresh pico de gallo

1/4 tspground red pepper
-
1 1/2 -2chicken breast- 1 large and 1 small or 1 large and 1/2 large

1/4 ctaco sauce, hot

1 cangreen chile, diced
-
1/2 canchipotle salsa
-
1/8 cfresh pico de gallo

4 cheese mexican cheese or cheddar cheese

pepper jack cheese
How To Make yummy tummy spicey chicken mexican casserole

1Preheat oven to 350 degrees. In a large stock pot add enough water to cover chicken; add about 1/4c taco sauce to water; add chicken and simmer until no longer pink, about 30 minutes. Remove from water; let cool, retain liquid. Shred chicken.

2Spray a 12x7 baking dish with cooking spray. Mix Bisquick, 3/4c-1c cooking liquid from chicken( start with 3/4c, add a little more if mixture is too thick), corn, 1/8c pico de gallo and ground red pepper. Mix thoroughly, add a little more Bisquick if too thin. Spread Bisquick mixture into baking dish.

3In a medium bowl, combine shredded chicken, diced green chile, chipotle salsa, pico de gallo. Place evenly on top of the Bisquick layer in baking pan. Cover with mexican cheese or cheddar cheese. Cover top with pepper jack cheese.

4Spray the inside of a sheet of aluminum foil with cooking spray (this prevents the cheese from sticking during cooking). Place over the baking pan (sprayed side down). Bake at 350 degrees for 25 minutes. Remove from oven; remove aluminum foil and return to oven until cheese is bubbly and slightly browned, approximately 3-6 minutes but watch constantly, as all ovens are diffenerent.
