  • 3 stalk
    green onion, white and green parts minced and separated
  • 1 tsp
    Chinese 5 spice
  • 3 clove
    garlic, minced
  • 3 Tbsp
    soy sauce
  • 2 Tbsp
    sugar, divided
  • salt and pepper
  • 2
    chicken thighs
  • 1 Tbsp
    vegetable oil
  • 1 Tbsp
    honey
  • 2 tsp
    rice vinegar
  • 2 c
    prepared sticky rice
  • 1
    cucumber, sliced
  • 1 lg
    tomato, sliced into quarters

    In a ziplock bag, place the white parts of the green onion, the Chinese 5 spice, garlic, soy sauce, 1 Tbsp of sugar, salt and pepper. Score the chicken thighs and add to the marinade. Marinade for at least an hour or overnight.

    Preheat the oven 375 degrees F. Remove the chicken from the marinade and discard the marinade. Place the chicken on a foil lined baking sheet and roast for 30 minutes.

    Meanwhile, place the green parts of the green onion in a bowl. Add some salt, the remaining sugar, and oil, and microwave for 20 seconds. Mix the honey with the vinegar. Remove the chicken from the oven and pour the honey vinegar over the skin.

    Serve the scallion oil over the top of the sticky rice. Season the cucumber and tomato with salt and pepper. Serve along side the chicken and rice.
