4boneless skinless chicken thighs

8 cchicken stock

1 smshallot cut in half

11 inch knob of ginger

6 clovegarlic minced

1 Tbspfish sauce

9.6 ozpackage of glass noodles

1 cred cabbage chopped

4scallions chopped

fresh cilantro for garnish

fried shallots for garnish
How To Make vietnamese chicken and glass noodle soup

1Place the chicken stock in a pot and add the chicken thighs, the shallot, ginger and garlic. Cook until the chicken is no longer pink. Remove the chicken to cutting board. Strain out the stock through a fine mesh strainer discarding the solids.

2Place the stock back on the stove and add the fish sauce, glass noodles, cabbage and scallions. Cook until the glass noodles are done About 5 minutes. Cut the chicken into pieces and add back to pot. Cook until chicken is warmed through

3Serve garnished with cilantro and fried shallots
