veggie stuffed chicken breasts

Several years ago, I wanted to make some sort of stuffed chicken breast, but didn't know what. I had a frig full of veggies, so this is what I ended up with. It was amazingly good. I took it to a family gathering and everyone raved about it. I hope you try it and enjoy it too!

Ingredients For veggie stuffed chicken breasts

6 lgboneless, skinless chicken breasts, pounded to 1/4 inch thickness

1/2yellow onion, chopped

2 lgcelery stalks, chopped

4 ozmushrooms, chopped

1/4 smpackage shredded carrots, chopped

1 cbroccoli, chopped
-
16 ozpackage of frozen spinach, thawed, drained and squeezed dry

8 clovegarlic, minced
-
1 tspblack pepper
-
1 tspsalt
-
1 Tbspdried basil
-
1 Tbspdried parsley

2 tspdried oregano
-
1/2 cparmesan cheese, grated or shredded

8 ozfeta cheese, crumbled

2pieces of bread, toasted and crumbled (or croutons, crushed)
How To Make veggie stuffed chicken breasts

1Mix everything together. Spread veggie mixture down the center of each flattened chicken breast and roll up tightly. Secure with toothpicks as needed. Place in baking dish seam side down.

2Bake at 350, covered with foil, until chicken is nearly done (about 30-45 min.), then remove foil and finish cooking (another 15 min.).
