veggie fried noodles

I have bought the grated carrots and added those instead of slicing a carrot. I also have used mixed veggies in this instead of carrot and peas. As a special touch I add chicken making this a meal in itself. I can buy pre-cooked chicken in a package in meat dept. Perfect for this. Everyone I have shared this with loves it. It is easy to make and you can adjust it many ways.

Ingredients For veggie fried noodles

  • 2 pkg
    3oz ramen noodles (discard flavor packet)
  • 3 Tbsp
    peanut or veg oil
  • 3
    eggs, beaten
  • 4
    green onions, thinly sliced
  • 1 sm
    carrot
  • 1/2 c
    frozen peas, thawed
  • 1/2 md
    red pepper, diced
  • 2 Tbsp
    sesame oil
  • 3 Tbsp
    soy sauce

How To Make veggie fried noodles

    Boil noodles til soft about 3 min- drain

    Heat 1 T oil in wok or lg skillet over med high heat, Add eggs, scramble then transfer to a bowl.

    Heat 1 T oil to pan add onion, carrot, peas,& pepper..cooking onion til soft 3-4 min. Transfer to egg bowl.

    Heat remaining oil and sesame oil in pan - add noodles, cook stirring frequently 2-3 min. Add remaining ingredients from bowl and soy sauce. Cook 3-5 min til heated and mixed together.
