1 1/2 lbground chicken

1/2 cpork rinds, crushed

1 tspgarlic salt

1 bunchgreen onions

2 mdeggs

0.5 tspblack pepper

1 bunchgreen onion, chopped

2 Tbspbutter, melted

1 cchicken broth
-
4 ozcream cheese
-
1 chalf and half
-
3 Tbspsundried tomato

1/2 cbasil, fresh, chopped

2 Tbspcapers

2 sprigoregano, fresh

How To Make tuscan inspired chicken meatballs

1Preheat oven to 425°F

2In a large bowl combine chicken, pork rinds, garlic salt, green onions chopped, 2 eggs, and pepper. Combine well and scoop onto a greased cookie sheet to make approximately 20 meatballs. Bake in preheated oven 15-20min until internal temperature reaches 160°F.

3While meatballs are baking in a large skillet melt butter add green onions, and cook over medium high heat for 3min. Add broth, half and half and cream cheese. Stir until well blended.

4Add tomato, basil, oregano, and capers. Stir until well combined and fragrant. Add the baked meatballs. Coat with sauce and simmer for 5-7min. Serve hot, Enjoy!
