This easy delicious keto friendly meal will break up the dinner rut. The creamy delicious sauce combined with the light flavor of the ground chicken is perfect. Great for lunch leftovers too! Enjoy!

  • 1 1/2 lb
    ground chicken
  • 1/2 c
    pork rinds, crushed
  • 1 tsp
    garlic salt
  • 1 bunch
    green onions
  • 2 md
    eggs
  • 0.5 tsp
    black pepper
  • 1 bunch
    green onion, chopped
  • 2 Tbsp
    butter, melted
  • 1 c
    chicken broth
  • 4 oz
    cream cheese
  • 1 c
    half and half
  • 3 Tbsp
    sundried tomato
  • 1/2 c
    basil, fresh, chopped
  • 2 Tbsp
    capers
  • 2 sprig
    oregano, fresh
  • salt and pepper

How To Make tuscan inspired chicken meatballs

    Preheat oven to 425°F

    In a large bowl combine chicken, pork rinds, garlic salt, green onions chopped, 2 eggs, and pepper. Combine well and scoop onto a greased cookie sheet to make approximately 20 meatballs. Bake in preheated oven 15-20min until internal temperature reaches 160°F.

    While meatballs are baking in a large skillet melt butter add green onions, and cook over medium high heat for 3min. Add broth, half and half and cream cheese. Stir until well blended.

    Add tomato, basil, oregano, and capers. Stir until well combined and fragrant. Add the baked meatballs. Coat with sauce and simmer for 5-7min. Serve hot, Enjoy!
