turkey or chicken creole

Have too much turkey at Thanksgiving? I always do--and this is a good way to use it up. It is equally good with chicken. If you want, you can replace the 3 medium tomatoes with a large can of diced tomatoes.

Ingredients For turkey or chicken creole

  • 2 1/2 c
    fresh, sliced mushrooms (about 11 large)
  • 1/2 c
    coarsely chopped onion
  • 1/4 c
    margarine
  • 2 tsp
    fresh lemon juice (about half of a lemon)
  • 1 c
    coarsely chopped green pepper
  • 1/2 c
    sliced celery
  • 2 c
    chopped tomatoes (about 3 medium)
  • 2 Tbsp
    flour
  • 1 1/2 c
    chicken (or turkey) stock
  • 1/4 c
    white wine
  • 2 c
    cooked turkey or chicken, diced
  • 1 tsp
    salt (optional)
  • 1/8 tsp
    pepper

How To Make turkey or chicken creole

    Saute mushrooms and onions in margarine and lemon juice until onions are translucent and soft.

    Add remaining veggies and cook until tender--about 5 minutes.

    In a small bowl, combine flour and stock until mixture is smooth and add to veggies.

    Add wine and cook until soft until sauce begins to thicken, stirring occasionally.

    Add remaining ingredients and heat through.

    Serve over rice or noodles.
