Ingredients For turkey croquettes

3/4 lbthick sliced turkey from the deli (great if you have left over turkey)

8-10 slicebread

1/4 cchopped onion

3 Tbspbutter
-
1/2-1 tsppoultry seasoning

1 jarturkey gravy

1/4-1/2 cwater
-
1/2 cbread crumbs
-
1/4 cclub crackers, crushed

1/2 cchicken breading mix ( i use martha washington)
How To Make turkey croquettes

1Melt butter in pan over med low heat, add onion and saute til soft, add 3 tblspn of the gravy and the waterand 1/4 tsp of poultry seasoning and simmer.

2Break bread up into pieces and mix rest of poultry seasoning, add 1/4 of chicken breading mix. Mix the turkey in the bread add the onion mixture and mix together.

3In a med size bowl add bread crumbs, chicken breading mix and crushed crackers. Use an ice cream scoop and scoop a ball of turkey croquette mix and roll until ball is covered. Take the croquettes and refrigerate 1/2 hr. (I like to put mine in the freezer for an hour or so)

4Preheat oven to 350, bake on a greased cookie sheet for 30 minutes until golden and crispy. Heat the rest of gravy to serve with the croquettes.
