Ingredients For true souther fried chicken

1whole cut up chicken, 6 pieces plus wings or boneless skinless chicken of choice

gallonwater
-
1/4 csalt
-
2 cbuttermilk
-
1egg
-
3 call purpose flour

1 tspcrushed/ ground black pepper

1 tspsalt

1/8 tspcayenne pepper

1/8 tspthyme, dried

1/8 tspbasil, dried

1/8 tsporegano, dried

1/8 tspcoriander

2-3inches of shortening or canola oil in heavy skillet
How To Make true souther fried chicken

1pour water and 1/4 cup salt into large metal or glass bowl, soak chicken for at least 3 hours.

2take chicken out of brine and dry on clean cooking cloth or paper towels

3pre-heat oil or shortening in large/heavy metal fry pan to 350 degrees.

4beat egg in buttermilk

5mix all dry ingredients in gallon size zip lock bag and shake well
-
6dredge dry chicken in flour mixture starting with large pieces.

7then dip into buttermilk/egg mixture let excess drip off

8dredge chicken in flour mixture again and gently place into pan of 350 degree oil or shortening

9cook 6 -12 minutes per side or until juices run clear drain on rack for a few minutes and serve. Cook few pieces at a time and be sure all are relative in size.
