This one was very interesting...the bananas seemed a bit weird to put in here, but it ended up working much better than I expected. Everyone had seconds, and it was pretty simple to put together. The only time consuming part was getting the sweet potatoes ready and cooked. use canned yams to save time. totally worth trying, we'll definitely have it again :) On a side note, next time I think I'll throw in some brown rice to serve it over.

Ingredients For tropical chicken bake

8chicken thighs, skinless and boneless (or substitute chicken breasts)

2 Tbspbutter

6 mdsweet potatoes (cooked, peeled, and quartered)

4bananas, sliced
-
2 can(11 oz each) mandarin oranges, drained
-
2 can(8 oz each) crushed pineapple (pineapple chunks are ok too)
-
20 ozsweet and sour sauce
-
2/3 cchopped almonds (i used pecans...walnuts are ok too)
How To Make tropical chicken bake

1In large skillet, cook chicken in butter. I actually cut the chicken into lg. bite size pieces instead of keeping them whole. Either way works fine.

2In ungreased 9x13 baking dish, mix sweet potatoes, bananas, oranges and pineapple.

3top with chicken

4pour sweet and sour over the top

5sprinkle with nuts

6bake uncovered 350 25-30 min

7*** try serving it over rice for variety***
