Ingredients For tom yum chicken thighs

  • FOR THE TOM YUM SAUCE
  • 2 Tbsp
    lemongrass paste
  • 6 clove
    garlic
  • 1 1/2
    inch ginger peeled
  • 2 Tbsp
    tom yum paste
  • 1 md
    lime juiced and zest
  • 5
    scallions white parts only
  • 2 Tbsp
    shrimp paste
  • 2 Tbsp
    fish sauce
  • 1/2 c
    cilantro chopped
  • 3 Tbsp
    peanut oil
  • 1/2 c
    brown sugar
  • FOR THE CHICKEN
  • 6
    chicken thighs bone in
  • cilantro for garnish

How To Make tom yum chicken thighs

    Preheat oven 350 degrees. Spray a baking pan with cooking spray. Add the 6 chicken thighs in the pan skin side up. Season with salt and pepper. Place in oven. Bake for 20 minutes.

    Meanwhile place all ingredients for tom yum sauce in food processor and process until everything is finely chopped and well mixed.

    After the chicken has baked 20 minutes slather the sauce all over the top of the chicken. Return to oven and bake another 10 to 15 minutes.

    Garnish with cilantro
