1 1/2inch ginger peeled

2 Tbsptom yum paste

1 mdlime juiced and zest

5scallions white parts only

2 Tbspshrimp paste

1/2 ccilantro chopped

6chicken thighs bone in

How To Make tom yum chicken thighs

1Preheat oven 350 degrees. Spray a baking pan with cooking spray. Add the 6 chicken thighs in the pan skin side up. Season with salt and pepper. Place in oven. Bake for 20 minutes.

2Meanwhile place all ingredients for tom yum sauce in food processor and process until everything is finely chopped and well mixed.

3After the chicken has baked 20 minutes slather the sauce all over the top of the chicken. Return to oven and bake another 10 to 15 minutes.

4Garnish with cilantro
