Sausage sandwiches with grilled onions, peppers and sauce are a favorite in many parts of the country, so I decided to make a version I would really enjoy with Chicken, feta and spinach sausage which is so delicious and full of flavor. The sauce I added to this sandwich is super easy and has addt'l crunch of sauteed carrots in marsala wine. Carrots are added to several different types of Italian sauces so this one is just kicked up a little with more carrots. Add the onions, cheese and olives and you have one mouth watering sandwich....my husband named it, The Italian Buster. LOL

Ingredients For the italian buster

1/3 cblack olives, sliced

1/2 cmozzarella cheese, shredded

1 jarsmall pizza sauce
-
2 tspitalian seasoning

1 lgcarrot, shredded

1/2 mdonions, sliced

1 mdpepper, green sliced

1/3 cmarsala wine
-
2 Tbspbutter
-
4 mdchicken feta spinach sausage or your favorite sausage

4sausage/hoagie rolls
How To Make the italian buster

1This is my chicken, feta spinach sausage before getting it on grill. NAME BRAND SAUSAGES ARE: Pederson's Natural Farms All Natural Al Fresco makes it w/a hint of Rosemary Applegate Organics and Usinger's Deli

2Grill your sausage for 10 -12 minutes. Remember it’s chicken sausage so you don’t want to over cook it.

3Saute your sliced onions & peppers in some butter and then you can add to your carrot sauce. Next sauté carrots in some butter and marsala wine until tender. When carrots are finished add to your pizza sauce.

4Heat your pizza sauce in a pan and add add'tl Italiane seasoning or your favorite seasoning. Once heated add the sauteed carrots. Toast the sandwich buns first in the oven and then add your sausage, some sauce, grilled onions, mozzarella and slice olives on top and place back in oven till cheese is melted about 4 to 5 minutes.
