I fell in love with Thai cuisine when an exchange student from Hong Kong took us to our first Thai restaurant. I think the marriage of the best of Chinese with the best of Indian is the culmination of Thai. I love food from around the world and Thai is definitely one of my most favorite.

Ingredients For thai peanut shrimp and linguini

1 lblinguini

kosher salt to taste

2-3 qtwater

1 1/2 lblarge shrimp, cleaned and deveined

1/2 ccreamy peanut butter

1/2 csoy sauce, low sodium

1/2 cchicken broth
-
2 Tbsphoney
-
1 Tbsplime juice
-
2 tspcrushed red pepper flakes

1 1/2 tspcornstarch

1/2 cchopped green onions
-
1-2 Tbspcanola oil
How To Make thai peanut shrimp and linguini

1Cook linguini in boiling salted water according to package instructions.

2Saute` shrimp in a little oil, just until they turn pink.

3Combine peanut butter, soy sauce, chicken broth, honey, lime juice, red pepper flakes and cornstarch in s saucepan and mix well. Cook stirring constantly, for 5 minutes or until thickened.

4Toss the shrimp, hot linguini, and sauce with green onions in a bowl. Spoon onto a serving platter and enjoy.
