My husband is a diabetic who doesn't like chicken. Finding ways to disguise the taste of chicken can be difficult. I think I found one in this recipe as it combines other tastes he likes.

Ingredients For tex-mex sloppy joes

  • 2 Tbsp
    vegetable oil
  • 1
    medium onion, chopped
  • 1
    medium green sweet pepper, chopped
  • 1/2 c
    frozen whole kernel corn
  • 2 clove
    garlic, minced
  • 2 oz
    jalapeño, chopped (optional). can use green chilies instead, 4 ounce can
  • 1 lb
    chicken or turkey, ground
  • 1 tsp
    chili powder
  • 1 tsp
    cumin, ground
  • 1 tsp
    oregano, dried
  • 3/4 c
    ketchup
  • 4 tsp
    worcestershire sauce
  • 6
    whole grain sandwich rolls

How To Make tex-mex sloppy joes

    In a large nonstick skillet, heat oil over medium heat.

    Add onion, pepper, corn, garlic, jalapeño or chilies. Cook for 4-5 minutes until onion is tender, stirring occasionally.

    Stir in chicken or turkey, chili powder, cumin, and oregano. Cook for 5-6 minutes more until chicken or turkey is no longer pink. Stir in ketchup and worchester sauce; heat through.

    Divide mixture among rolls (1/2 cup filling). Calories 280 ea (w/roll)
